Amberjack is known for its strength on the line and its rich, meaty texture at the table. Often prepared grilled or smoked, it’s a great option for bold, satisfying meals after a physically rewarding offshore fishing trip.

Grilled Amberjack Steaks

Ingredients

  • 2 amberjack steaks

  • 2 tbsp olive oil

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp Cajun seasoning

  • ½ tsp paprika

  • lemon wedges for serving

Instructions

  • Preheat grill to 400°F and lightly oil the grates.

  • Pat the amberjack steaks dry with paper towels.

  • Brush both sides with olive oil.

  • Season evenly with salt, pepper, Cajun seasoning, and paprika.

  • Place the steaks on the grill and cook 4–5 minutes per side.

  • Grill until the fish flakes easily and has good grill marks.

  • Remove from the grill and serve with fresh lemon wedges.

Amberjack Fish Tacos

Ingredients

  • 1½ lbs amberjack fillets

  • 2 tbsp olive oil

  • 1 tsp chili powder

  • ½ tsp paprika

  • ½ tsp garlic powder

  • ½ tsp salt

  • ½ tsp black pepper

  • 8 small corn or flour tortillas

  • 1 cup shredded cabbage

  • ½ cup diced tomatoes

  • ¼ cup chopped cilantro

  • lime wedges

  • Lime Crema

  • ½ cup sour cream

  • 1 tbsp lime juice

  • pinch salt

Instructions

  • Preheat grill or skillet to medium-high heat.

  • Pat the amberjack fillets dry and brush with olive oil.

  • Season with chili powder, paprika, garlic powder, salt, and black pepper.

  • Grill or sear the fish 4–5 minutes per side until it flakes easily.

  • Remove from heat and break the fish into large flakes.

  • In a small bowl, mix sour cream, lime juice, and salt to make the lime crema.

  • Warm tortillas in a skillet or on the grill.

  • Fill each tortilla with amberjack, shredded cabbage, tomatoes, and cilantro.

  • Drizzle with lime crema and serve with lime wedges
