Triggerfish are one of the best eating fish in the Gulf of Mexico, prized for their mild flavor and firm, clean texture. After a productive day fishing reefs and structure offshore, triggerfish are perfect for grilling, frying, or simple coastal dishes.

Fried Triggerfish

Ingredients

  • 1½ lbs triggerfish fillets

  • 1 cup all-purpose flour

  • ½ cup cornmeal

  • 1 tsp salt

  • ½ tsp black pepper

  • ½ tsp paprika

  • ½ tsp garlic powder

  • vegetable oil for frying

  • lemon wedges for serving

Instructions

  • Pat the triggerfish fillets dry with paper towels.

  • In a shallow bowl, mix flour, cornmeal, salt, pepper, paprika, and garlic powder.

  • Dredge the fillets in the flour mixture until evenly coated.

  • Heat about ½ inch of vegetable oil in a skillet to 350°F.

  • Carefully place the fillets in the hot oil.

  • Fry 3–4 minutes per side until golden brown and crispy.

  • Remove and drain on paper towels.

  • Serve hot with lemon wedges.

Triggerfish Francaise

Ingredients

  • 1½ lbs triggerfish fillets

  • ½ cup all-purpose flour

  • 2 eggs, beaten

  • 2 tbsp olive oil

  • 3 tbsp butter

  • 2 cloves garlic, minced

  • ½ cup chicken broth

  • 2 tbsp lemon juice

  • 1 tbsp chopped parsley

  • ½ tsp salt

  • ½ tsp black pepper

  • lemon slices for serving

Instructions

  • Pat the triggerfish fillets dry and season with salt and pepper.

  • Lightly dredge the fillets in flour, then dip them into the beaten eggs.

  • Heat olive oil in a skillet over medium heat.

  • Cook the fillets 3–4 minutes per side until lightly golden. Remove from the pan.

  • In the same pan, melt butter and sauté garlic for 30 seconds.

  • Add chicken broth and lemon juice, then simmer 2–3 minutes.

  • Return the fish to the pan and spoon the sauce over the fillets.

  • Sprinkle with parsley and serve with lemon slices.
