Grilled Red Snapper with Lemon Garlic Butter

Ingredients

  • 2 lbs red snapper fillets

  • 2 tbsp olive oil

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp paprika

  • ½ tsp garlic powder

  • Lemon Garlic Butter

  • 4 tbsp butter

  • 2 cloves garlic, minced

  • 1 tbsp lemon juice

  • 1 tsp lemon zest

  • 1 tbsp chopped parsley

  • pinch salt

    Instructions

  • Preheat grill to 400°F and lightly oil the grates.

  • Pat the red snapper fillets dry and brush both sides with olive oil.

  • Season evenly with salt, pepper, paprika, and garlic powder.

  • Place fillets on the grill skin-side down and cook 4–5 minutes.

  • Carefully flip and grill another 3–4 minutes until the fish flakes easily.

  • In a small pan, melt butter over low heat. Add garlic and cook 30 seconds.

  • Stir in lemon juice, lemon zest, parsley, and a pinch of salt.

  • Spoon the lemon garlic butter over the grilled red snapper and serve with lemon wedges.

Baked Red Snapper Veracruze

Ingredients

  • 2 lbs red snapper fillets

  • 2 tbsp olive oil

  • 1 cup diced tomatoes

  • 2 tbsp green olives, sliced

  • 2 tbsp capers

  • 2 cloves garlic, minced

  • ½ small onion, diced

  • 1 tsp oregano

  • ½ tsp salt

  • ½ tsp black pepper

  • 1 tbsp lime juice

  • fresh cilantro or parsley for garnish

Instructions

  • Preheat oven to 375°F.

  • Place red snapper fillets in a lightly oiled baking dish and season with salt and pepper.

  • Heat olive oil in a skillet over medium heat.

  • Add onion and cook 2–3 minutes until softened.

  • Stir in garlic and cook 30 seconds.

  • Add diced tomatoes, olives, capers, and oregano. Simmer 5 minutes.

  • Stir in lime juice and pour the sauce over the snapper fillets.

  • Bake 15–18 minutes until the fish flakes easily.

  • Garnish with chopped cilantro or parsley and serve.
