Cobia is a highly sought-after Gulf Coast fish known for its firm texture and mild, slightly sweet flavor. After a successful day targeting cobia offshore or nearshore, it’s perfect for grilling or pan-searing with simple ingredients.
Grilled Cobia
Ingredients
2 cobia fillets
2 tbsp olive oil
1 tsp salt
½ tsp black pepper
½ tsp paprika
½ tsp garlic powder
lemon wedges for serving
chopped parsley (optional)
Instructions
Preheat grill to 400°F and lightly oil the grates.
Pat the cobia fillets dry with paper towels.
Brush both sides with olive oil.
Season evenly with salt, pepper, paprika, and garlic powder.
Place the fillets on the grill and cook 4–5 minutes on the first side.
Flip carefully and grill another 3–4 minutes until the fish flakes easily.
Remove from the grill and garnish with chopped parsley if desired.
Serve with fresh lemon wedges.
Cobia with Garlic Herb Butter
Ingredients
2 cobia fillets
2 tbsp olive oil
1 tsp salt
½ tsp black pepper
½ tsp paprika
Garlic Herb Butter
4 tbsp butter
2 cloves garlic, minced
1 tbsp lemon juice
1 tbsp chopped parsley
1 tsp chopped thyme or basil
pinch salt
Instructions
Pat the cobia fillets dry with paper towels.
Season both sides with salt, pepper, and paprika.
Heat olive oil in a skillet over medium-high heat.
Place the fillets in the pan and cook 4–5 minutes without moving to develop a golden crust.
Flip and cook another 3–4 minutes until the fish flakes easily.
In a small pan, melt butter over low heat and add garlic. Cook 30 seconds.
Stir in lemon juice, parsley, thyme, and a pinch of salt.
Spoon the warm garlic herb butter over the cobia before serving.
