Grilled Redfish on the Half Shell

Ingredients

  • Redfish fillets (scales and skin left on)

  • 1/2 cup butter, melted

  • 2-3 tbsp Cajun or Blackening seasoning

  • 1 tbsp garlic, minced or powder

  • 1 tbsp lemon juice

  • Optional: Mayonnaise (for moisture), parsley, thinly sliced onions

Instructions

  • Preheat grill to medium-high (350-400°F). Rinse fillets and pat dry.

  • Season: Brush fillets generously with melted butter, garlic, and lemon juice. Top with a generous amount of Cajun seasoning.

  • Place fillets, skin-side down (scales down), directly on the grill grates.

  • Close the lid and cook for 15-25 minutes. Do not flip the fish. The fish is done when the meat is white and flakes easily with a fork.

  • Baste with more butter mixture during the last 5 minutes. Remove carefully and serve with lemon wedges.

Cajun Blackened Redfish

Ingredients

  • 1 tbsp paprika

  • 2.5 tsp kosher salt

  • 1 tsp cayenne pepper

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • ½ tsp dried thyme

  • ½ tsp dried oregano

Instructions

  • Dip redfish fillets in melted butter and heavily coat both sides with a Cajun blackening seasoning blend (paprika, cayenne, garlic powder, onion powder, thyme, oregano).

  • Heat a cast-iron skillet over high heat until it is smoking.

  • Cook for 2-4 minutes per side, or until a dark crust forms and the internal temperature reaches 145°F (63°C).

  • The process produces significant smoke, so ensure good ventilation.

  • Serve immediately with lemon wedges and melted butter.
