Mahi mahi is a standout Gulf Coast fish known for its vibrant color in the water and its clean, slightly sweet flavor on the plate. After an exciting offshore trip chasing mahi in Destin or Panama City Beach, it’s perfect for grilling, tacos, or simple fresh preparations.

Grilled Mahi Mahi

Ingredients

  • 2 mahi mahi fillets

  • 2 tbsp olive oil

  • 1 tsp salt

  • ½ tsp black pepper

  • ½ tsp paprika

  • ½ tsp garlic powder

  • lemon wedges for serving

  • chopped parsley (optional)

Instructions

  • Preheat grill to 400°F and lightly oil the grates.

  • Pat the mahi mahi fillets dry with paper towels.

  • Brush both sides with olive oil.

  • Season evenly with salt, pepper, paprika, and garlic powder.

  • Place the fillets on the grill and cook 4–5 minutes on the first side.

  • Flip carefully and grill another 3–4 minutes until the fish flakes easily.

  • Remove from the grill and garnish with chopped parsley.

  • Serve with fresh lemon wedges.

Mahi Mahi Fish Tacos

Ingredients

  • 1½ lbs mahi mahi fillets

  • 2 tbsp olive oil

  • 1 tsp chili powder

  • ½ tsp paprika

  • ½ tsp garlic powder

  • ½ tsp salt

  • ½ tsp black pepper

  • 8 small corn or flour tortillas

  • 1 cup shredded cabbage

  • ½ cup diced tomatoes

  • ¼ cup chopped cilantro

  • lime wedges

  • Lime Crema

  • ½ cup sour cream

  • 1 tbsp lime juice

  • pinch salt

Instructions

  • Preheat grill or skillet to medium-high heat.

  • Pat mahi mahi fillets dry and brush with olive oil.

  • Season with chili powder, paprika, garlic powder, salt, and pepper.

  • Grill or sear the fish 4–5 minutes per side until it flakes easily.

  • Remove from heat and break the fish into large flakes.

  • In a small bowl, mix sour cream, lime juice, and salt to make the lime crema.

  • Warm tortillas in a skillet or on the grill.

  • Fill each tortilla with mahi mahi, shredded cabbage, tomatoes, and cilantro.

  • Drizzle with lime crema and serve with lime wedges.
