Spotted seatrout is a classic inshore catch along the Emerald Coast, valued for its light, flaky texture and clean flavor. After a successful day of fishing in Destin or 30A, trout is perfect for simple recipes that let the freshness of the fish shine through.
Lemon Butter Seatrout
Ingredients
4 sea trout fillets (approx. 6 oz each)
4 tbsp unsalted butter, melted
3 cloves garlic, minced
1 lemon (juiced and sliced)
2 tbsp fresh parsley, chopped
Salt and black pepper to taste
Optional: 1 tsp paprika or red pepper flakes for heat
Instructions
Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
Pat trout dry, season with salt and pepper, and place on the baking sheet.
In a small bowl, mix melted butter, minced garlic, lemon juice, and parsley.
Pour the sauce over the fillets and top with lemon slices. Bake for 12-15 minutes until the fish flakes easily.
Garnish with fresh parsley and pour pan juices over the fish before serving.
Blackened Spotted Seatrout Tacos
Ingredients
1 lb fresh Speckled Sea Trout fillets, patted dry
2 tbsp Olive oil or butter
2 tbsp Smoked Paprika, 1 tsp Garlic powder, 1 tsp Onion powder, 1 tsp Dried thyme, 1 tsp Salt, 1/2 tsp Cayenne pepper
8 Corn or flour tortillas, warmed
2 cups Shredded cabbage or coleslaw mix
1/2 cup Greek yogurt or Sour cream
Juice of 1 lime
1/4 cup Chopped fresh cilantro
1 tsp Cumin
Instructions
Preheat a cast-iron skillet over high heat until smoking. Brush trout fillets with olive oil and generously coat all sides with the blackening spice mix.
Place fillets in the hot skillet. Sear for 2-3 minutes without moving them to create a crust. Flip carefully and cook for another 2-3 minutes until the fish is flaky and opaque.
Mix the slaw ingredients in a bowl while the fish cooks.
Warm tortillas on the skillet. Flake the cooked trout into pieces, place on tortillas, top with slaw, and add a squeeze of lime.
